Vishu is the first day of the Malayalam calendar and is the call of a new year in Kerala. Vishu Kanji is the traditional recipe that is made on this day as a breakfast. This is a healthy and balanced porridge with addition of Coconut Milk and Field Beans. I have used RosaMatta Rice (Traditional Kerala Red Rice) which can be replaced with equal amounts of Parboiled and Raw Rice of your choice. You can also add two tablespoons of Moong Dhall along with Field beans as a variation. Learnt this recipe from my friend from Palakkad which I make every year for Vishu.
