Rasavangi is an interesting gravy which is normally made using Brinjal or Ash gourd. My grandma used to make this with Ridge gourd / Peerkangai. Here is the flavorful authentic recipe made out of farm fresh Peerkangai/Ridge Gourd, home grown coconuts, freshly ground spice mix and fresh tamarind from native.
