An authentic recipe which is a specialty of my mom (she is very famous for all her Vathal kuzhambu recipes and had a huge crowd coming just to taste her special Vathal kuzhambu when my family was running a small hotel in our native some 25 years back). No surprise that I too got famous for my Vathal Kuzhambu during my college days and now a days my mom too is a fan of my Vathal Kuzhambu. I use generous amount of Cold Pressed Gingelly oil enhanced with Palm Jaggery which I get from Oil mill at Kundrathur, Chennai. We make a whole batch of all types of Dried Veggies starting from Brinjal, Cluster Beans, Bitter-gourd, Mango, Carrot, Radish (Yes you heard it right, thats my gradma’s idea), Turkey Berry and Black Night Shade Berries (Manithakkali Vathal).
Among all the Vathal Kuzhambu recipes, this is my personal favourite with addition of Papads. It is a great combo with hot steamed rice and heaven with curd rice.
