Madurai Milagai Chutney

Madurai is always close to my heart as I did my UG in Agricultural College. During the stay of 4 years, I got introduced so many specialty dishes of Madurai of which this is my personal favourite. This is a super spicy chutney to go with hot hot idlies. Learnt from one of my friend’s mom and I almost forgot to list in in my blog. Thanks to one road side mess which reminded me to do this after quite a long time.

I have used Long Red Chillies, if you are using rounded variety increase the number of chillies by 2 or 3 (Yes, it is meant to be spicy indeed, so do not complain on spice levels 😁). Add a spoonful of gingelly oil while serving to combat the spice levels. Shallots can be replaced with Big Onions but shallots give the unique taste. And this is a no cook recipe except for tadka.
