Pirandai Idly Podi

Hello dear all 🙂 Hope you all are staying safe indoors. Quarantine combined with summer is giving us an opportunity to make Vathals and am making more vegetable vathals with wilting veggies. I harvested tender Pirandai (Veldt Grape / Devil’s Backbone) stems last week and processed them to vathal. Hardly in two days it got dried crisp which I used to make this healthy Pirandai Idly Podi.

How to make Pirandai Vathal?

Select tender Pirandai stems, cut them to medium sized pieces. Use a scissor to chop so that your hands wont get itchy. You can also smear some oil to your hands while handling the Pirandai stems. Add 2 to 3 cups of water, two tablespoon of Rocksalt in a pan and bring it to boil, add the chopped Pirandai pieces and switch off. Close and let it rest for half an hour. Drain the water and dry the pieces in hot sun for two days. Your Pirandai Vathal is ready.
