Summer is here and it is essential that we keep ourselves hydrated all time to avoid sun strokes. We need a lot of water to avoid dehydration and the requirements of the body may not be met by just taking water and juices. Seasonal fruits like Watermelon, Melons, Oranges can be a good source of water, but the sugar content can mess with your weight loss goals or sugar levels. Hydrating vegetables are an excellent alternative, as they help in keeping ourselves hydrated throughout the season. I am planning to share some simple and healthy recipes using these hydrating veggies this summer which you can include in your meal plan.
For this week’s Organic kitchen it is a very tasty Masala recipe using the farm fresh Ridge-gourd / Torai / PeerkanKai, a highly hydrating vegetable that should be a part of your diet this summer season to keep you hydrated and healthy.
Ridge-gourd belongs to cucumber family and has huge amount of health benefits.
It has high moisture content as cucumbers hence can be included in your weight loss diet regime.
It is extremely low in saturated fats and rich in dietary fiber.
Ridge-gourd is a great source of Vitamin A.
The anti inflammatory properties of Ridge-gourd helps in treating peptic ulcers too.


You can have this recipe as an accompaniment for rice, rotis and goes well with curd rice. It can also be used as a spread for masal Dosa
