A popular recipe from Karnataka using the fresh tender Ridge gourd – Heerekai Dosa / Ridge gourd Dosa is something I learnt from one of my friend who is a native of Karnataka few years back. Whenever I get tender gourds from farm or from my Keerai Thatha, I immediately make this as this one has become a family favorite since I started making them . More than Kootu, Sambar, Thogayal, Chutney we prefer having this vegetable this way.
The measurements I have given here will yield 5 medium sized Dosas, which is good for three of us at home. You can scale up the measurements as needed.


I have used Organic Thooyamalli Raw Rice (A Heirloom Rice Variety) which adds a good flavour to this recipe. Spice levels are also as per your preference. The recipe calls for Byadgi chillies, but you can replace it with local red chillies as well.
