Hi all, Hope you all are staying safe and healthy. Here is a healthy and family favorite recipe Chuvanna Cheera Thoran / Red Amaranth Stir Fry using Organically grown farm-fresh Red Amaranth Leaves / Chuvanna Cheera.

Compared to other green leafy vegetables, this Red Amaranth is rich in protein, calcium, iron, copper, essential vitamins, magnesium, zinc, and manganese. Copper and Manganese have anti-oxidative properties and copper is essential for the production of red blood cells in our body. Red Amaranth is nutritionally similar to Beetroot. This recipe is often made at home by my MIL and this Keerai is also used in Cheera Manga Avial.
