A delightful chutney recipe in my ChutneySeries using the farm-fresh Chayote squash / Chow Chow. Including gourds/ squash vegetables in your diet in the summer season helps in keeping the body hydrated.
Chayote is rich in vitamins and nutrients and has anti-inflammatory properties that can aid in the treatment of high blood pressure, kidney stones, and indigestion. It also aids in weight loss, as it is low in calories and rich in fiber. Chayote contains the trace minerals zinc, magnesium, calcium, phosphorus, and potassium, which help to maintain a healthy metabolism, immune system, and strong bones.
