Inji Kuzhambu / Ginger Gravy

Dear all !!!! For this week’s Organic Kitchen, I am sharing a healthy and digestive Kuzhambu recipe using homegrown fresh ginger. Got some fresh tender ginger from my Uncle’s home in Kerala during my visit there two weeks before. Remembered this Inji Kuzhambu that my grandma used to make whenever there is a heavy festive meal as a digestive food. I am so glad to share yet another Grandma’s recipe here in this space.

Tip : I prefer chopping ginger into tiny bits as it tastes good in Kuzhambu as we bite. Also a wee bit of jaggery is optional.

A must try whenever you get fresh, tender ginger and when you have digestion issues. Goes well with hot steamed rice, Idly, Dosa and even Curd Rice. Give it a try and share your valuable feedback.
