Hello dear all 🙂 Here I am after a week gap with a unique recipe (exotic too) which has innumerable medicinal properties. Agathi Poo (Sesbania Flower), Yes, sighting this in local market is quite a rare scenario and I was way too excited when I spotted this with a farm lady two days back. I literally ran to gran the whole lot she had. It has been ages since I had this stir fry and never came across this flower anywhere in markets. Not to mention that everyone around was looking at me weirdly as the excitement I displayed was so obvious 😀 and I had mini sessions of explaining the benefits and sharing recipe for all the inquiries 🙂
Needless to say it has huge health benefits which is not much known among this generation. I keep thanking my grandma for explaining me all these native foods and made me to relish those during my childhood days with her (I was more grandma brought up than mom brought up )
Cleaning takes time but worth it. There are two varieties, White Flowers and Red Flowers, Red ones being more bitter. I have used White ones. Cleaning involves checking for work infestations (yes look out for those tiny demons and discard them) and removing the Stamen (The stick like stuffs with pollen sacs), the Stigma (Central thick part) and the Calyx (The green cup holding the flower and the pedicel/stalk attached to it). Choose flowers that are not yet bloomed as they are soft and cook easily. The bloomed ones will be little leathery.





It tastes best with hot steamed rice with a dollop of ghee or gingelly oil. Instead gingelly oil you can use coconut oil for better flavor. When you get to see this flower, do try this recipe and share your valuable feedback which keeps me going 🙂
